Cashew nuts are manually harvested from ripe cashew apples. The nut (attached below the fruit) is separated and sorted to remove defective or immature nuts.
Freshly harvested nuts are high in moisture. They are sun-dried or machine-dried to reduce moisture to 8–10%, improving shelf life and preparing for shell cracking.
Dried nuts are roasted or steamed to soften the hard shell. The shell is then cracked mechanically or manually to extract the kernel inside. This step is crucial to minimize kernel breakage.
The extracted kernel is still covered by a thin brown skin (testa). This layer is removed using steam and hand-peeling methods to preserve the shape and color of the cashew.
Kernels are classified by:
Shape (whole, split, broken)
Size (e.g., W240, W320...)
Color (white, ivory, light yellow)
This ensures quality consistency for various markets and processing needs.
This is the step that enhances product value. Cashews can be:
Dry roasted (oil-free)
Salted or flavored (e.g., wasabi, honey, cheese)
Coated (chocolate, caramel)
Cold-pressed into cashew oil or blended into cashew butter
Ground into cashew powder for culinary uses
Processed cashews are packed in food-grade, moisture-resistant packaging. Vacuum sealing is used to preserve crispness and freshness for longer shelf life.
Final products undergo quality checks (moisture, taste, color, chemical residues, microbiology). Approved products are labeled, QR-coded for traceability, and distributed to domestic and export markets.
